Head chef at the Cliffhanger Eatery on the Cliff
Manuel joined the Cliffhanger last year and has been introducing top quality food to this popular local restaurant. He was born in Salon de Provence, France into a family of restauranteurs. At 13 years of age he began his professional career and at 22 years old he took charge of the restaurant with his parents who have the Stella Maris in Hyeres, France. He attended the acclaimed Alain Ducasse school near Paris for three years and went on to create a restaurant that appeared in the Guide Michelin with a fork! At the age of 45 he decided to come to the UK, and worked at the Haven Hotel with Jason Hornbuckle and later at the Hilton Hotel with well-known TV chef Matt Tebbutt. Manuel brings his culinary culture and the Mediterranean to his cooking at the Cliffhanger as he likes mixing culinary traditions and products.
